Intro to Menu by Chef 'Ana Ma'ilei Savio (also Allergy NZ board Member)

Feke Lolo'i (Braised Octopus cooked in Coconut, red cabbage, carpaccio style) with a Plum Salsa

Gia's Lu Moa ('Ana's take on a traditional chicken dish cooked in taro leaves instead uses red cabbage which is locally grown, baked in coffee beans instead of an umu.

To finish - Gia's Koko Samoa and Blueberry Crostata or Tart with Fresh Berries, Acquafaba meringues
